I like scallops but often struggle to find something interesting to do with them. This recipe is quick and easy and makes a nice mid weak meal. It is based on one I found here. Basically you simmer a tin of chopped tomatoes along with garlic, red pepper flakes, parmesan rind and fresh basil. Add the scallops, we used queen scallops cut into smaller pieces and cook it for about 5 minutes. Meanwhile cook the spaghetti. Then just season it and dish it up served with a few more sprigs of basil. It really is tasty.
