We recently borrowed a pasta machine from a friend after being inspired by an Italian cooking programme. One of the recipes we were keen to try out was this oozy egg raviolo with smoked salmon.
The recipe can be viewed in full at the above link but the basic stages are, making up the pasta dough and running it through the pasta machine to make pasta sheets. Cutting out the raviolo circles as shown to the left.
Mixing up the filling which consists of smoked salmon, egg, wilted spinach and ricotta cheese. The filling is then piped onto the pasta circle as shown in the picture to create a nest. An egg yolk in then placed inside the nest and the toppings are put onto the raviolo.
The resulting parcels are placed onto greaseproof paper so that they can be be easily transferred into the pan. These are put into salted boiling water and cooked for two minutes. Before serving they are garnished with grated parmesan. If cooked correctly the egg yolk should still be runny when you cut into it as shown on the left.
