This is interesting it’s chocolate made from fruit juice and without the fat. Created with apple, orange and cranberry juice droplets that replace half the fat content in the chocolate, they have the same feel as chocolate with a fruity taste. The technique developed by a team at the University of Warwick substitute the cocoa butter and milk fats that go into conventional chocolate bars with liquid in the form of micro bubbles. They apparently give the chocolate a velvety feel and make it snappy to bite. It looks as though it is is possible to enjoy chocolate without the guilt but where is the fun in that?
