I had a bit of left over meat from a roast chicken I cooked at the weekend so decided to turn it into a tasty mid week meal. Finding some basmati rice in the cupboard I decided on egg fried rice. I cooked, drained and cooled the rice before scrambling a few eggs in the work. Then I added the cold rice, a handful of frozen peas, chopped spring onions and the leftover chicken. Heated it through and added some light soy sauce for a bit of added flavour. It made a very light but very tasty dish, all cooked in less than 15 minutes and for less than a £1.00.
